What I eat
I get tons of requests to share a ”what I eat in a day” type video. I also get a lot of food and eating related comments so today I’ll share my thoughts on food and share a bit more of what I eat so I can refer to this blog post when I get asked in the future.
I’m not interested in food. There.
I get comments like How can you not be into food? It’s healthy for you! Well, physical activity is healthy too but not everyone enjoys that or even exercises.
We all have different interests. I have plenty, but food is just not one of them.
I’m not interested in buying it. I’m not interested in cooking it. I’m not that interested in eating it.
Oh, also when I say I don’t cook, some people assume that means I eat out or order in all the time. I hardly ever eat out other than a snack at a coffee shop if I’m out and about and I order in maybe once a year.
But people, I do eat.
On rare occasions I do cook a simple saffron fish soup (don’t ask for the recipe, I search for it online when I need it) but most days I just assemble meals.
What I do is get a few ingredients and/or meal prep so I don’t have to necessarily fry or boil every day.
I’m not someone who needs variety so if I come up with a meal I like I just repeat it until I don’t want it anymore or the season changes and I want something lighter or something heartier.
I rarely use any other seasoning than salt and white balsamic vinegar.
Four examples of meals I make
Meal 1
1/2 bag of chopped and pre-rinsed salad of crunchy lettuce with apple or beet root.
A drizzle of white balsamic vinegar
2 fried crumb coated cod filets (cooked on a baking sheet in the oven)
Tartar sauce (not home made obviously)
Meal 2 (photo above)

3 Ready made Karelian pirogues
A dollop of butter

Fried broccoli
Fried vegan sausage (I’m not vegan)
A sprinkle of grated cheese

As for breakfast, I mostly don’t eat any. I enjoy intermittent fasting (my IBS is better when I do). I usually eat my first meal of the day at noon. That’s currently overnight oats with chia seeds. I eat my main meal at around 5 pm. I also have a few snacks during my eating window between noon and 8 pm.
